Andouille (pronounced ahn-DOO-wee), is a spicy pork sausage which originated in France. French settlement of the area that is now Louisiana made andouille a staple in Cajun cuisine. Traditionally made into links and smoked, andouille makes a great addition to soups, stews, gumbo, jambalaya, and other southern-style dishes.
